Linguine and Clams

A classic Italian dish that combines pasta with fresh clams in a flavorful sauce. Here's a popular recipe that you can try:

Ingredients:
- 12 ounces linguine pasta
- 2 pounds fresh clams (such as littleneck or Manila clams)
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (adjust according to your spice preference)
- 1 cup dry white wine
- 1/2 cup clam juice (reserved from steaming clams, or you can use bottled clam juice)
- 1/4 cup fresh parsley, chopped
- Salt and black pepper to taste
- Lemon wedges (for serving)

Instructions:
1. Bring a large pot of salted water to a boil and cook the linguine according to the package instructions until al dente. Drain and set aside.

2. While the pasta is cooking, clean the clams. Scrub the shells under cold water to remove any dirt or grit. Discard any clams that are open and do not close when tapped.

3. In a large, deep skillet or pot, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for about 1 minute until the garlic becomes fragrant. Be careful not to burn the garlic.

4. Increase the heat to medium-high and add the clams to the skillet. Pour in the white wine and clam juice, and cover the skillet with a lid. Cook for about 5-7 minutes, shaking the skillet occasionally, until the clams open. Discard any clams that do not open.

5. Remove the cooked clams from the skillet and set them aside, keeping them warm. Continue cooking the sauce uncovered for a few more minutes until it reduces slightly.

6. Add the cooked linguine to the skillet with the sauce, tossing well to coat the pasta. If the sauce seems dry, you can add a splash of pasta cooking water to moisten it.

7. Return the clams to the skillet and gently toss them with the pasta. Add the chopped parsley and season with salt and black pepper to taste. Give it a final toss to combine all the ingredients.

8. Serve the linguine and clams in shallow bowls, garnished with additional parsley if desired. Provide lemon wedges on the side for squeezing over the dish.
